If it comes off then it can either be replaced (either the same one or more commonly a new one). What you are probably thinking of is a temporary substance used to fill cavities until the permanent composite is used. Usually they use the temp stuff if they know they’re going to have to do multiple "sessions" (like some root canals).
If there is enough tooth to hold a filling, he will just refill it with a new one. If not a crown may be needed to strengthen and protect the tooth.
