I have a high pallette, (roof of the mouth) also, but never sucked my thumb or even took a bottle as a baby. I don’t think it’s correctable without oral surgery. I’m pretty sure some people have this naturally and it never presents a problem or needs to be corrected. I saw an orthodontist for years due to a small lower jaw, causing a very slight overbite and impacted teeth – correctable with retainers during development, (as the jaw grows) and in worse cases with "head-gear", (a device which fixes to implements attached to the wisdom teeth on each side worn at night or for the prescribed time a day) or with braces.
My dentists and orthodontists have never indicated to me that anything should be done about my high, recessed pallete.
However, you may want to get a consultation, (this usually includes making a mold of the mouth, a simple procedure with special plaster, which they put into your mouth and you bite down on until it sets, (not painful or anything) and taking X-rays, (they just put something in your mouth which you bite on and while you sit in a chair, the machine spins around you, taking the X-rays. Afterward, they will consult with you about what they think you may need.
